Products and cooling times :

Generally speaking, the selection of cooling cells must be based on a precise study of the products to be cooled (type, dimensions, containers, etc.). In fact, for any cell sizing, an estimate of the cycle time is a key step.

The cooling time is directly linked to the density and thickness of the product, but also to the way it is loaded (material and dimensions of the container, use of trolleys or plastic crates, presence of lids, etc.).

Products and cooling times :

Particular attention must be paid to checking the trolleys used.While a conventional GN1/1 or GN2/2 ladder is relatively compact, an oven trolley is much bulkier, with dimensions varying widely from one manufacturer to another.

It is the dimensions of the trolleys and their number that will enable the selection of a suitable cell size.
